How To Make White Gravy

Mmm mmm mmm! Who doesn’t love a creamy white gravy? It just makes everything taste better. We’re originally from Louisiana where white gravy is a stable among many meals like chicken fried steak, biscuits and gravy, pork chops, bacon and eggs – you name it!

But most people don’t know that it’s so easy to make. With this white gravy recipe, you’ve got a delicious addition to your dish in less than 10 minutes with just a few household ingredients.

This particular white gravy recipe was written after we made our unbelievable Southern Chicken-Fried Steaks. If you’re looking for a unique Southern dish to impress your friend, I suggest you try them!

But don’t worry, this recipe works even if you haven’t just fried something, you can also make an amazing white gravy with fresh oil.

Ingredients Needed To Make White Gravy

  • 1/4 cup frying oil (preferably used)
  • 1/4 cup all purpose flour
  • 1/2 cup half and half
  • 2 cups milk

How To Make White Gravy

If you are making gravy after frying something such as chicken fried steaks in ghee like we did, pour off all but 1/4 cup of the frying oil from the pan. You can either pat it off with a paper towel or pour it out.

If you are making white gravy from scratch, then heat a pan on medium-high heat and add in the oil. We prefer to use a cast iron pot for gravy since it adds to the flavor.

Once the pan and oil are hot, add in the flour.

Once the mixture is browned, add 1 cup of milk and all of the heavy cream and stir. But here’s the trick: don’t add all the milk and heavy cream at once! I prefer to add about quarter of each at a time. This gives time for the gravy to thicken up as you cook it! Continue adding milk as needed to reduce the thickness of the gravy if you wish.

You should see the gravy thicken and become a beautiful creamy off-white color.

White Gravy

I usually use any leftover seasoned flour mixture for my gravy, but if you’re using plain flour you may want to add salt and pepper to the gravy. I find it often tastes perfectly seasoned just from the fry oil!

What is the best oil to use for white gravy?

You can use any oil that you would fry in like vegetable oil, canola oil, or avocado oil. We prefer to use ghee butter, beef tallow, or avocado oil for our white gravy. We think it makes the gravy taste even better! If you are cooking bacon before you make the gravy, you could also use the leftover bacon grease. This will turn your white gravy into “country” gravy. This method of cooking country white gravy has been used by Southerners for centuries. I’ve made white gravy with bacon grease many times, and I can personally say that it is amazing!
