The Perfect Scrambled Eggs Every Time

Scrambled eggs are unique because they are a very common “beginner” recipe, but they can easily go sideways. Scrambled eggs cooked incorrectly can easily end up burnt, rubbery and stuck to your non-stick pan. We make scrambled eggs most mornings and after years of practice I have worked out a fail-proof method.

The key to the perfect fluffy scrambled eggs is whipping them before cooking them and managing the heat during cooking. You don’t want to agitate them too much or your eggs will be pebbly, but you also need to cook all parts of your scramble. I’ll list all of my favorite scrambled egg tips so that you can avoid all the mistakes I’ve made through the years.

This recipe only requires eggs and some butter or oil for the pan, but I often whisk in milk, cottage cheese, and/or veggies for extra flavor. Once you have the basic process down, additions are easy! Simply toss them in after you whisk your eggs.

How to make the perfect scrambled eggs

Heat your butter or oil in a pan over medium/low heat until melted. It is important that your greased pan is fully heated to prevent the eggs from sticking to your cookware! Sometimes I think waiting for your pan to be ready is the toughest part of cooking scrambled eggs.

While your pan is heating, crack your eggs into a bowl and whisk for one minute with a fork or metal whisk. You want to see bubbles form in the blended eggs.

Pour the eggs into the pan and avoid stirring for about 2 minutes.

Begin to scrape the eggs from the sides and bottom of your pan, turning the mixture so the uncooked portions are exposed to the heated bottom of the pan.

Your eggs should be fully cooked after about 5-7 minutes after pouring them into the pan (depending on the temperature, size of the pan, amount of eggs etc.). Your eggs are fully cooked when there is no more liquid portions of the mixture.

Season to taste with salt, pepper, green onions or whatever you like on your scramble!

Tips for the Perfect Scrambled Eggs

  • It is very important that you don’t add your eggs to the pan until it is adequately heated. This prevents sticking. This can take a minute or two since scrambled eggs are ideally heated over low/medium heat.
  • Why should you cook eggs over lower heat? Eggs cook very quickly, so using a lower heat allows more even cooking, larger chunks and a creamier texture. High heat produces dry and rubbery scrambled eggs. Most of the issues with scrambled eggs can be traced back to excessive heat.
  • After I pour my egg mix into the pan, I don’t begin to stir it until about 2 minutes have passed. This allows the eggs to “set” and results in a larger crumb.
  • Once the initial 2 minutes have passed, I begin to stir the egg mixture. I frequently lift the pan off of the burner during mixing to manage the heat.
  • Most people cook eggs in a shallow skillet, but I get the best results cooking scrambled eggs in a small saucepan! I believe this is also related to heat management. It allows me to flip the cooked portions on top of the uncooked portions easily and keeps the eggs together during cooking.
  • A wooden spatula is by far my favorite tool for scrambled eggs. They are gentle on your eggs and on your cookware.
  • Scrambled eggs are generally cooked (over medium/low heat) in 5-7 minutes! A rule of thumb is to remove the eggs right when you think they might be finished as opposed to giving them another minute.

The Best Additions to Scrambled Eggs

Scrambled eggs are amazing solo or jazzed up with mix-ins or toppings! Here are some of our favorites:

  • Whisk in 1 tbsp of milk or cottage cheese into your egg mix. This is a very common addition to eggs because it helps slow the cook time and adds amazing creaminess to your scrambled eggs.
  • Chopped tomatoes or pico de gallo. I like to put my tomatoes/pico into the pan while the butter is heating and then pour the egg mixture on top once the pan is heated. Cook as usual.
  • Fresh chives. If I’m adding chives, I’ll usually incorporate them after I add the eggs to the pan.
  • Cheese. Cheese is understandably one of the most popular egg toppings. I usually add it on top of my plated scrambled eggs or when I’m just about to remove them from the burner. My favorite cheeses to put on my eggs include shredded mozzarella, goat and pepper jack.

Ingredients

  • 1 tsp 1 butter

  • 6 6 eggs

  • salt and pepper to taste

Directions

  • Heat your butter or oil over medium heat.
  • Whisk eggs for 1 minute, until small bubbles form in the mixture.
  • Pour egg mixture into pan and reduce heat slightly.
  • Do not stir eggs for 1-2 minutes to allow them to set. After that, gently turn eggs to fully cook mixture (another 4-5 minutes).
  • Remove from heat and season with salt and pepper to taste.
