Sourdough Tortillas

Don’t want your sourdough starter to go to waste? Tortillas are a perfect way to use up your discard because they taste great, store well and can be used in so many dishes! We usually eat these up within a few days either in burritos, tacos, quesadillas or with dip! My toddler daughter loves to make these with me because it involves lots of rolling out and minimal waiting.

The key to flexible tortillas made at home is keeping them in a warm, humid environment. These tortillas can easily come out thicker than standard tortillas. Pay attention to thickness prior to cooking and make sure your cooktop is sufficiently heated to help get the right consistency!

Ingredients Sourdough Discard Tortillas

  • 1 cup sourdough starter
  • 3/4 cup water
  • 1/4 cup olive oil
  • 2 tsp salt
  • 3 cups all purpose flour

How To Make Sourdough Tortillas

Mix all of the ingredients together using your hands or a dough spatula to combine.

Knead the mixture for several minutes until a smooth and stretchy dough forms.

Place the dough in an airtight container or cover with plastic wrap and let the dough rest for 1-2 hours at room temperature or 8-24 hours in the refrigerator.

Divide the dough into 8-12 balls (depending on the desired size of your tortillas).

Roll out the dough with a rolling pin. If making 12 tortillas, try to extend each to at least 8 inches in diameter.

Cook the tortillas on a hot, dry cooktop (ideally cast iron) until they start to bubble and the edges appear cooked. Flip. Tortillas will have brown spots.

Remove from the heat and place into an airtight container.

Tips for the Perfect Tortillas

  • Make sure the cast iron is hot enough prior to cooking tortillas.
  • You can use parchment paper to help roll out your tortillas very thin.
  • Keeping the tortillas warm and enclosed will keep them from drying out.
  • The tortillas can be stored at room temperature for 3 days and can be stored in the freezer for up to 3 months. When reheating your tortillas, wrap them in a moist paper towel in the microwave or heat them on your cooktop.
