Ingredients for Slow Cooker Loaded Baked Potato Soup

- 4 tbsp butter, unsalted
- 1/2 cup diced onions
- 2 cloves diced garlic
- 2 lbs russet potatoes
- 6 slices bacon
- 1 tbsp Old Bay seasoning
- 4 oz cream cheese
- 1/4 cup heavy cream
- 3 cups vegetable broth
- 1 cup shredded cheese
How to make Slow Cooker Loaded Baked Potato Soup
Start by preheating the oven to 425 degrees to cook the bacon. I used this simple recipe for cooking bacon in the oven that’s mess free.


Turn on the slow cooker and add butter, diced onions, and diced garlic.

Dice your potatoes into small cubes. This will help them cook evenly and faster in the slow cooker.
Add the potatoes, seasoning mix, and veggie broth to the slow cooker.
When the bacon is finished cooking, cut into chunks and add them to the slow cooker.
Let cook for 3 hours on high or 7 hours on low.
Cover and cook on low for 7-8 hours or on high for 3-4 hours until the potatoes are tender.



Stir in the milk or half-and-half, shredded cheese, and cream cheese. Cover and cook on low for another 30 minutes until the cheese is melted and the soup is heated through.
Add chives and shredded cheddar cheese to each bowl.
