
The classic scampi recipe calls for a sauce made from garlic, butter, and white wine. This delicious and simple Shrimp Scampi Recipe Without Wine is an easy adjustment if you don’t have any wine on hand!
The original recipe doesn’t need to be changed, but white wine doesn’t seem to last long at our house! After several scampi cravings resulting in a trip to the liquor store, we worked out a recipe that substitutes the wine for ingredients we almost always have on hand.
This dish is one that we love to throw together when we’ve both had busy days and little time to prep. Best of all, our young daughters clean their plates and usually beg for more “shrimpies”.
All you need is a pot to boil the noodles and a pan to saute the sauce and shrimp. Once the shrimp and noodles are cooked you toss them together and top with cheese for a perfect and yummy dinner!

Ingredients for Shrimp Scampi Without Wine
- 4 tbsp unsalted butter
- 4 tbsp olive oil
- 4-6 cloves of garlic, minced
- 2 tsp dried diced onion
- 1/4 cup vinegar (I prefer red wine vinegar)
- 1/4 cup vegetable or chicken broth
- 16 oz raw shrimp, peeled
- 1 tsp Italian seasoning
- 1 dash red pepper flakes (or more depending on your desired spice level!)
- 1/2 tsp salt
- 1/4 tsp pepper
- 12 oz wide noodles such as fettuccini

How To Make Shrimp Scampi Without Wine
Bring 3-4 quarts of lightly salted water to a boil and add your pasta. Cook according to the package directions (usually 10-15 minutes) and strain.
Saute the butter, olive oil, garlic, onion until fragrant.


Once simmering, add the vinegar, broth, and shrimp and stir.

Season the shrimp with the Italian seasoning, salt, red and black peppers and stir until the shrimp are opaque and have just turned orange/pink on both sides.
Add the contents of the shrimp pan to the strained noodles and toss!

Tips for the Perfect Shrimp Scampi Without Wine
- We love this recipe because shrimp cook so fast! However that means they are easy to overcook. Avoid chewy, overcooked shrimp by removing them from heat once they have just turned opaque and pink.
- If you put your pasta in to boil at the same time that you start heating up the oil and butter your noodles and shrimp should be ready right around the same time. Trust me, you don’t want to wait on pasta when those yummy shrimp are finished!
- We like to add extra creaminess by mixing in 1 tbsp heavy cream into the sauce after the shrimp have cooked and topping the final product with Parmesan cheese.
Substitutions
- If you happen to have white wine, simply replace the broth and vinegar with 1/2 cup of white wine.
- The red pepper flakes can be swapped with a couple of shakes from your favorite hot sauce!
- We love the Green Harvest Seasoning from Frontier Co-op, we use it instead of Italian seasoning in this recipe.
- I find red wine vinegar tastes the best in this recipe, but white vinegar and some lemon juice also work well!
