Crockpot Turkey Butternut Squash Soup

This delicious soup is loaded with veggies, bursting with flavor and so easy to make! I love the pairing of the sweet carrots and butternut squash with the savory herbs and turkey. We love this soup on its own or paired with rice or pasta to make it even more filling!

We love crockpot recipes because they are easy and practically fool-proof! The step that takes the most time for this recipe is chopping all of your veggies!

Ingredients for Crockpot Turkey Butternut Squash Soup

  • 2 tbsp butter
  • 1/8 cup apple cider vinegar
  • 4 cups vegetable or chicken broth
  • 1 cup onion, chopped
  • 4 cloves garlic, chopped
  • 2 lbs uncooked turkey meat – this can be substituted with chicken meat if you don’t have turkey
  • 1 cup peeled carrots, chopped
  • 1 cup celery, chopped
  • 1 cup butternut squash, chopped
  • 1 tsp salt
  • 1 tsp rubbed sage
  • 1 tsp thyme
  • 1 tsp curry powder
  • 1 tsp coriander
  • 1/8 cup greek yogurt
  • Optional: 1 slice sourdough or french bread, ripped into pieces
  • Optional: 1 1/2 cup cooked rice or pasta

How to Make Crockpot Turkey Butternut Squash Soup

I like to start by heating the butter in the crockpot on the high setting. It can take an hour for the crock to fully heat up, so even turning it on for 10 minutes while you chop veggies can help speed up the cooking process!

Place the butter, turkey meat, onions, and garlic into the crockpot. Top with the apple cider vinegar and 1 cup of the broth. Cover and allow to cook for 1.5-2 hours on high.

After about 1.5 hours the meat should begin to turn white on the outside. Add the carrots, celery, squash, seasonings (salt, sage, thyme, curry powder, coriander) and the remaining 3 cups of broth.

Allow to cook for an additional 2-4 hours on high. The turkey should shred easily when agitated and the carrots should be soft, yet in-tact.

Before serving, stir in the greek yogurt for a touch of creaminess. I also often add a ripped up slice of bread to thicken the soup. This is also when you would add pasta or rice if desired.

Remove any bones (if you did not use de-boned meat). Serve and enjoy!
