Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- One half teaspoon baking soda
- Two-thirds teaspoon salt
- 1 teaspoon garlic powder
- One half teaspoon dried thyme
- One half teaspoon dried parsley
- One half cup (1 stick) cold unsalted butter, cubed
- 1 cup shredded sharp cheddar cheese
- Two-thirds cup buttermilk, cold
- Optional: 2 tablespoons chopped fresh chives

Instructions
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Mix the dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, thyme, and parsley.
Cut in the butter: Add cold, cubed butter to the flour mixture and use a pastry cutter or your fingertips to work it in until the mixture resembles coarse crumbs.
Add cheese and herbs: Stir in the cheddar and chives (if using).
Mix the dough: Pour in the buttermilk and stir just until combined. Do not overmix.
Shape the biscuits: Turn the dough out onto a lightly floured surface. Pat into a 1-inch thick rectangle and cut with a biscuit cutter or slice into squares.
Bake: Place biscuits on the prepared sheet and bake for 15–18 minutes or until golden and fluffy.
Optional: Brush the tops with melted butter and a sprinkle of garlic salt for extra flavor.
