
We searched through countless recipes to conjure up what is absolutely, without a doubt, the best Beef Sirloin Tip Roast Slow Cooker recipe out there (verified by several friends and family who we shared this meal with).
This roast smelled up our house for hours and had everyone waiting for dinner! It was tender and flavorful without a single complaint. And here’s the BIGGEST SECRET to our method – getting the pot roast seasoning just right and browning the outside of the roast on a cast iron skillet before putting it in the Crockpot.
This recipe requires a little more prep work than some of the other out there that tell you just to throw the roast in the crockpot, but trust me its worth the extra 10-15 minutes!

Ingredients for Beef Sirloin Tip Roast in the Slow Cooker

For the seasoning mix
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- 1/3 cup apple cider vinegar
- 2 tablespoons dried minced onions
- 1 teaspoon herbs de provence
Seasoning Notes
These portions made plenty enough seasoning for a 2 lb sirloin tip pot roast before we put it in the slow cooker. Adjust accordingly if your pot roast is smaller or larger.
This makes a “wet rub”. You could leave off the apple cider vinegar to make a dry rub, but I don’t recommend it! The apple cider vinegar adds a tremendous amount of flavor. If you could smell through the computer screen, you would take my advice.

For the slow cooker roast
- 2 lb sirloin tip roast
- 1 cup vegetable broth
- 6 tablespoons butter
- 1 1/2 cup chopped carrots
- 1 medium onion coarsely chopped
- 1 cup celery chopped (3-4 stalks)
- 6 red potatoes quartered
- 4 thyme sprigs
- 1 rosemary sprig

Roast Notes
This recipe will work the same for any type of beef roast. We used what we had on hand but feel free to use whatever cut of beef you prefer.
We grow rosemary and thyme in our backyard, so we have a ton on-hand. You can use regular seasoning if you have that instead – no biggie.
Feel free to switch up the potatoes as well. We prefer red potatoes with our slow cooker roasts because they tend to stay together the best. We like the potatoes soft but not completely mashed. We cooked our tzatziki mashed potatoes with this which complimented the roast so perfectly.
We used vegetable broth instead of beef broth. We intentionally planned on using beef broth but noticed the carton we had was pre-seasoned with a few herbs and such that we didn’t want in our recipe. You can use beef broth instead but just make sure it is “plain”. The vegetable broth worked great, and next time we make this we will use it again.
Most importantly – don’t skip the searing step!
How To Make Beef Sirloin Tip Roast Slow Cooker
Start with the seasoning mix. Making the seasoning mix is simple – add all the ingredients to a bowl, mix together, and rub onto your roast. No need to overcomplicate it!


Add 3 tablespoons butter into the slow cooker to get it preheating (yes, we preheated our slow cooker). Slow cookers can take over an hour to get to full heat, and by preheating you can cut down on an hour or so cook time.

Add 1 tablespoon of butter onto a cast iron skillet. Sear the beef roast on all sides until the seasoning is crispy. This should take about 5 minutes. No need to overdo it, but searing the roast will help lock in all the flavors.


Add the roast to your Crockpot along with the juices and blackened seasoning that was leftover in the cast iron skillet. I bet your house is already starting to smell amazing!



Now you can add the rest of the vegetables to your slow cooker. Start with the red potatoes, then the carrots, onions, and celery. Then add the final butter, thyme, and rosemary. Lastly, add in the vegetable broth.
Cook on low for 6 hours. We actually cooked our roast 7 hours because we added it to the slow cooker first while cutting all the vegetables. It shouldn’t make a big difference. Typically, beef needs to cook between 6 to 8 hours in the slow cooker to get wonderfully tender.
Check periodically and stir occasionally. We stirred it about 3 times over the six hours. This isn’t necessary. You could drop your roast in the Crockpot then head to work for the day! We were home and couldn’t help ourselves.


After about 4 hours your beef roast should start to look like the images above. And after the full six hours it should fall apart like the image below!

Peel apart and serve with your favorite side. We recommend our famous Tzatziki Mashed Potatoes.
