
A baked sweet potato was my poor college student meal. This dish is simple yet versatile, healthy yet delicious and perfect solo or as a side. So even today I still make them when I want a quick and healthy lunch or side. Once we got an air fryer the sweet potato quickly became one of my most frequent dishes, somehow my old favorite got even easier to make!
If you haven’t fallen in love with sweet potatoes yet, I hope this simple recipe will take you there! Sweet potatoes are an amazing source of fiber, antioxidants and vitamins, especially when compared to their potato cousins. While many people may think of role in sweet dishes such as sweet potato pie or casserole, I find they truly shine when paired with a salty cheese or a tangy hot sauce. The beauty of a baked potato is you can add a multitude of toppings to make each bake different from the next.
Air fryers (much like a baked sweet potato) are popular for their simplicity and versatility. Air fryers are basically mini ovens that are quick to heat up and specialize in perfectly crispy bakes. I like the air fryer to bake my sweet potato because it takes about half the time to cook compared to a standard oven.

Air Fryer Sweet Potato Ingredients
- Whole sweet potato
- 1 tsp Seasoning mix (such as Green Harvest)
- Optional: 1 tbsp butter or olive oil
How To Cook Sweet Potatoes in the Air Fryer
Rinse the sweet potato but don’t dry completely (this allows your seasoning to stick to the skin).
Coat damp potato in seasoning mix. I love the Green Harvest Seasoning mix from Frontier Co-op, but you can substitute with your favorite seasoning mix, dry rub or even just sea salt! I use about half a teaspoon to coat the potato.

Preheat air fryer to 400 degrees F (200 degrees C).

Cook potato for 25-30 minutes or until potato skin puffs up and the flesh is soft.

Cut the potato open and mash butter into the flesh with a fork and top with extra seasoning (if desired). I usually mix in the other 1/2 teaspoon of seasoning at this time.

As I mentioned before, baked sweet potatoes are amazingly versatile! These potatoes taste amazing topped with Parmesean cheese, greek yogurt, or hot sauce!
Tips for the Perfect Air Fryer Sweet Potato
- Do not wrap your sweet potato in foil like a baked potato. The air fryer crisps it up perfectly. Wrapping the potato leaves the skin moist and slimy.
- A well cooked sweet potato will mash easily with a fork or a spoon. If your potato is resistant to mashing, its not ready yet!
- Many people think of sweet potato casserole when they think of sweet potato, but I find they pair amazingly with spicy/bold seasonings.
- If you’d like the perfect potato in even less time, you can cut the sweet potato in half and cook for 15 minutes.
