Ingredients
- 1 head lion’s mane mushroom
- 1/2 cup all-purpose flour
- 2 eggs, whisked
- 1 cup panko bread crumbs
- 1 tbsp olive oil
- optional: 1 tsp chili powder or seasoning mix
- optional: 1 tsp nutritional yeast

How to Make Air Fryer Lion’s Mane Mushroom Nuggets
Rip or chop the Lion’s Mane mushroom into nugget-sized pieces. Prepare a dish of flour, a dish of whisked eggs and a dish of breadcrumbs mixed with 1 tbsp of olive oil.
Preheat the air fryer to 400 degrees F and grease the basket with oil or butter.
Optional: Season the lion’s mane mushroom nuggets with 1 tsp of seasoning mix, chili powder and/or nutritional yeast.
Dip each mushroom nugget in the flour mixture, then the egg mixture and finally the breadcrumb mixture. Shake off the excess after each dip. Place the nuggets at least 1/2 inch apart on the air fryer basket.

Air fry for 10 minutes, flipping the nuggets halfway through.

Repeat as needed depending on the size of your air fryer and Lion’s Mane mushroom!

Tips & Tricks
- Dry and Slice: Lion’s Mane mushrooms have a high water content. After cleaning, pat them dry thoroughly with paper towels. Slice them into even, nugget-sized pieces to ensure they cook evenly and get crispy.
- Breading Technique: For a good crunch without deep frying, dip the mushroom slices first in a beaten egg, then coat them in seasoned breadcrumbs or panko. This helps the breading stick and creates a crispy exterior. Consider adding some spices like garlic powder or paprika to the breadcrumbs for extra flavor.
- Air Fryer Space: Don’t overcrowd the air fryer basket. Lay the nuggets in a single layer with space between each piece to allow hot air to circulate freely, which is key to achieving that golden, crispy texture. You might need to cook in batches.
- Cooking Time and Flip: Preheat your air fryer to around 375-400°F (190-200°C). Cook for about 7-10 minutes, but flip the nuggets halfway through to ensure both sides get crispy. The exact time can vary depending on your air fryer model and the size of your nuggets, so keep an eye on them to avoid overcooking. They should be golden brown and crispy on the outside while tender inside.
