
My family loves shrimp recipes because they are usually able to be whipped up in a flash! These shrimp hoagies are simple as it gets; just cook the shrimp, prepare the dressing and load it up into a toasted bun.
These shrimp rolls are my own twist on the classic New England favorite. The avocado gives extra bulk and creaminess to the shrimp mix while the celery provides some crunch. All I use is a little seasoning mix, lemon juice and pepper to add some dimension, but other than that the ingredients really don’t need much to be delicious!

Shrimp Roll Ingredients
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 2 lb shrimp, peeled
- 1/2 cup celery, chopped
- 1 avocado, chopped
- 1/4 cup mayonnaise
- 1 tsp seasoning mix such as Old Bay or Tony Chachere’s
- 1/2 tsp pepper
- 1 tbsp lemon juice
- 6 hot dog buns
How To Make Avocado Shrimp Rolls
Cook the shrimp in a pan over medium-high heat with the oil and vinegar until pink and cooked through (about 5-6 minutes).

While the shrimp are cooking, combine the celery, avocado, mayo, lemon juice and seasoning in a bowl.
Once the shrimp are cooked, cut them in half and toss them in the avocado mixture.

Toast the buns (I like to butter them too!) and fill them with the shrimp mix. We got the buns from a local grocery store that makes then in-house. If you can, try to get fresh buns too! It makes a huge difference in the quality of the meal.

You add toppings such as cheese, onions, tomatoes, lettuce or pickles or enjoy as prepared!

Can you boil the shrimp instead?
Yes! Most recipes for shrimp rolls suggest that you boil the shrimp instead, but we prefer to saute ours in a cast iron pot. We find it’s easier to monitor the shrimp that way so they don’t overcook. But feel free to boil them if you prefer!
Tips for the Perfect Shrimp Rolls
- Use Fresh Shrimp If You Can: Use fresh shrimp, ideally from a local grocery store. If you can, opt for wild-caught for the best flavor. For the avocado, pick ripe ones that yield slightly to pressure.
- Don’t Overcook Your Shrimp: Boil the shrimp until they turn pink and opaque, which usually takes just 2-3 minutes. Overcooking can make them tough, so watch them closely!
- Seasoning is Key: Toss the cooked shrimp with a mix of lime juice, salt, pepper, and a pinch of cayenne or paprika for a little kick. Fresh herbs like cilantro or chives can add great flavor too.
- Don’t Be Scared Crunchiness: Add diced cucumber or bell peppers to the mixture for some crunch. This will provide a nice contrast to the creamy avocado and tender shrimp.
- Get Local Bread: Soft rolls, like brioche or potato rolls, work well. If you prefer something lighter, lettuce wraps can be a great alternative. Bonus points if you make your own!
